Vegan, grain free, gluten free, dairy free, & K for P.... does it get any better than this? These cookies are so delicious that your whole family will be reaching for them! They're nice and soft on the inside and have a perfect crunch on the outside! Check out the substitutions for a lower carb option as well!
Ingredients 1 1/2 cup almond flour- when measuring, scoop into measuring cup with a spoon (can substitute 1 cup almond flour and 2 scoops F-Factor vanilla protein powder) 5 tbsp coconut flour 1 tsp baking powder 1/3 cup coconut sugar (can substitute 2 tbs of stevia for a low carb option) ¼ cup almond butter 2/3 cup unsweetened almond milk 1 tsp vanilla 1/8 cup coconut oil (can substitute apple sauce) 1/4 tsp salt Sprinkles Hu Chocolate Gems INSTRUCTIONS Preheat oven 350 degrees Whisk together coconut oil, peanut butter, vanilla, and coconut sugar In a separate bowl mix together almond flour, coconut flour, salt, and baking powder Fold dry ingredients into wet ingredients Add in sprinkles (I won’t tell you how much… just go for it) Form dough into cookies and place on parchment paper on a cookie sheet Press in a chocolate gem (or two…or five) into the cookie Bake for 25-30 minutes, cool (if you have that kind of patience) and ENJOY! Makes about 2 dozen cookies Nutrition for 1 cookie: 80 calories, 5g fat, 5 carb, 1 fiber (approx.)
